Buy and protect potato 'seed'

Potato 'seed' are small potatoes grown from virus-free plants. These are the seed used for planting. You can buy these as early as February, but keep inside (egg cartons are ideal for storage) in a dry place in filtered light. Allow the potatoes to grow shoots. This process is called 'chitting'. Do not remove any of these shoots, as they are vital for the plants survival.
