Lift and store traditional chicory

Lift the 'parnsip' like roots in November. Throw away any unsuitable ones - which might be fangled or less than 3 cm at the crown. Cut back the leaves to 3 cm from the crown and cut back roots to 15 cm. Pack prepared chicory horizontally in a box of sand in a cool shed and keep until required.
