potting Cupressus sempervirens 'Pyramidalis' in the ground

Hi,I bought some cupressus but I don't want them to grow too tall, so was wondering if I could contain their size by planting them in pots, then submerging the pots in the soil. They are about 80cm (2.6 feet)tall now, and am wanting a final height of about 1m 50 (5ft). If this is possible, what pot size would you recommend? Or could I just cut off the growing tip when they reach the desired height?

Any other advice about restricting their size is most welcome.

Yes, I know any sane person would have just bought some dwarf conifers, but at E40 a pop I couldn't afford them. ;-)
