Hi, Scott,
Phyllostachys bissetii is one of those vigorous, fast spreading, pretty much invasive bamboos so I'm not sure how you would restrict its growth to create a maze. It wouldn't stay within the boundaries you want unless you were to sink barriers into the ground (and I'm talking about 50cm-1m down in the ground) to restrict its spread.

I am looking for a suitable plant for making a maze without waiting years to establish one, would this bamboo make a good solution? What distance apart should they be planted to make a good hedge, thanks.
